The story of our

Extra Virgin Olive Oil

The history of our Oil Centre began in the lands of Giarratana, a small village of 3000 inhabitants where people love nature. The olive tree is the main protagonist of our lands. Our olive groves extend at the foot of the Giarratana, in the vast countryside of the Ibleo territory. Tonda Iblea is one of the main varieties of our olive groves and more generally of the Ibleo territory . These are very vigorous trees with thick foliage from which is obtained a very valuable oil where the sweet, the light bitter and the spicy give a set of typically Sicilian flavors. So after years of determination , work and especially the desire to continue to believe in their dreams we came to take our extra virgin olive oil ``Center``.

Whence comes

The name CENTRO

Extra virgin olive oil has always characterized the history and tradition of Sicilian culture. The love for oil has been transmitted from generation to generation, becoming an essential element for every family; the center of every dish and center of many Italian recipes. This is where the name ``Centro`` of our Oil line comes from. ``Centro`` contains three different varieties of extra virgin olive oil: Tonda Iblea, Nocellara and Double available in different sizes ; from tin to use in the kitchen to the bottle to put on the table of your restaurant to enrich the flavor of each dish.

Tonda Iblea

Extra virgin olive oil type of the hyblaean territory. It is a full-bodied oil, dense with a sweet and slightly spicy taste that creates a typically Sicilian flavor. It has a green-gold color and very rich in polyphenols. It is very versatile In the kitchen and it can be used in any type of dish.

DOUBLE

Extra Virgin Olive Oil gained by an accurate selection of two typical varieties of olives of the Ibleo territory, for that it takes the name DOUBLE.

Nocellara

Extra virgin olive oil with a colour ranging from yellow to green. It is an oil with a slightly bitter taste, spicy and with a hint of sweet. In the kitchen this oil can be best tasted both raw for the seasoning of ministre and salads, or cooked for the preparation of roasts, and other recipes.

Cold extract from olives harvested from the Iblei Mountains

The production process

Our trees are cared for and pruned throughout the year. Harvesting is certainly one of the most important stages of the oil processing process. It happens during the period of September - November , through the harvesting method called ``a brucatura``. After harvesting the olives, they are extracted at the oil mill, where the olives are washed and crushed. The extraction process is ``cold``.<br /> Then after a rest phase the residue is deposited on the bottom of the container and the oil becomes spontaneously clear. Finally we have the bottling phase where the oil is packaged in different sizes.
